 Also known as bixin, butter colour or rocou; a yellow colouring (E-160b) extracted from the pericarp of the fruit of the tropical shrub Bixa orellana. The main component is the carotenoid bixin, which is fat-soluble. It is used to colour cheese, dairy produce and baked goods. The seeds are used for flavouring in Caribbean foods.
